Musciska is a unique product of Puglia and is a Slow Food Presidium.
Dried strips of pork fillet matured in wild fennel seeds, chilli and garlic.
It can be eaten on it's own, thinly sliced, or together with some rucola and extra virgin oliveoil. Deliscious!
Musciska was the traditional food of the shepherds duirng the trashumance as it was low in fat and high in protein. The shepherds used to hang the strips of fillet on trees to dry.
